President's Day All-American Weekend: NASCAR Chicken Grand Prix

A few years ago while I was doing my Chef thing for a NASCAR event for certain charities, we grilled too much chicken. This is not really a bad thing but as most of you know, cold grilled chicken can only taste good for so long. So I was asked to come up with something new and the result is this incredible sandwich which is unlike anything you've ever tasted before!

Here we have layer after layer after layer of unbelievable tastes and textures. Aside from the leftover grilled chicken, there is an avocado cream, smoked bacon -- YES BACON -- asparagus, juicy tomatoes and topped off with some toasted Parmesan cheese. Of course this is served openface on a thick slice of sourdough French bread. Since this was created for NASCAR it should go without saying that this sandwich is the most perfect sandwich in the world to accompany a tall iced glass of beer!

So the next time you have any leftover grilled chicken, forget about the usual leftover crap and experience something brand new. Experience something unlike you've ever experienced before. Experience NASCAR Chicken Grand Prix!

Ingredients needed to make NASCAR Chicken Grand Prix (serves 2):

  • 2 thick slices sourdough French bread
  • 1 avocado, peeled and pitted
  • 1 Tbs. mayonnaise
  • 1 tomato, sliced to a medium thickness
  • leftover grilled chicken, sliced thin
  • 4 spears cooked asparagus, halved lengthwise
  • 4 slices cooked bacon
  • finely grated Parmesan cheese (amount to your liking)

Steps:

  1. Pre-heat your broiler.
  2. If you want a crunchier sandwhich, toast the slices of bread in the oven a few minutes.
  3. In a medium bowl, mash the avocado with the tines of a fork. Stir in the mayonnaise to make an avocado cream.
  4. Liberally spread the avocado cream over the slices of bread.
  5. Layer the tomatoes over the avocado cream.
  6. Layer the chicken over the tomatoes.
  7. Layer the asparagus over the chicken.
  8. Layer the bacon over the asparagus.
  9. Sprinkle the top of the sandwich with the finely grated Parmesan cheese.
  10. Place the sandwiches on a baking sheet and place under the broiler a few minutes, just until the Parmesan cheese begins to get golden.
  11. Remove to a plater and serve.

Chef's Note: These sandwiches are so thick and loaded with tasty goodness, you might want to serve them with a fork and knife (and a bib might be a good idea as well).
