Not only are these an incredible All-American cookie, they are also a cookie made for todays hectic lifestyle. You can make the dough and keep it chilled until you're ready to make fresh homemade cookies! This is also one of those cookies made to be served with homemade ice cream
If you happen to be a cookie afficianado, I think you might find these little precious rounds of buttery flavor to be just this side of ecstasy. They are extremely easy to prepare, only have a couple of ingredients and the time it takes to go from oven to mouth is only about 12 minutes.
Ingredients needed to make Almond Butter Melts (makes about 50 cookies):
- 1 1/2 cups flour
- 1 1/2 cubes butter, softened
- 1 cup powdered sugar
- 1/2 tsp. salt
- 1 Tbs. vanilla
- Heavy cream for brushing (unwhipped whipping cream)
- Ground almonds for rolling
Steps:
- Into a mixer place the flour, butter, powdered sugar, salt and vanilla and beat until well incorporated.
- Remove the dough and place on the counter. Divide the dough in half and roll each half into a log about 1 1/2 inches in diameter. Wrap the logs in plastic wrap and chill about 2 hours.
- Pre-heat your oven to 350 degrees and line the bottom of a baking sheet with parchment paper.
- Unwrap the logs of dough and brush each with the heavy cream.
- Roll the logs into the ground almonds (pressing firmly so the almonds adhere).
- Slice the logs into little rounds and place on the prepared baking sheet.
- Place in the oven and bake 12 minutes.
- Remove from the oven and let cool on a rack before devouring them!
