As all football fans know, this coming Sunday, February 3, will be Super Bowl Sunday. This is a day where football fans all gather to celebrate the game and watch the action as to which team will come out on top as the all-time champion for the season. And with any celebration, there has to be good food! So this week, let's make foods that will be just perfect for a Super Bowl celebration!

Pizza never fails to please, especially on this special day! In fact, it's been said that this is Domino's Pizza's busiest day of the year. Many pizza restaurants that aren't usually open on Sunday are planning to be open this Sunday to handle the requests for those who are having pizza for their parties. If you'd rather not order pizza, try making your own! The recipe I'm passing along is for "Vegetable Pizza" and this is served cold. It can be served as an appetizer or even as a main dish, which is especially good for those who are vegetarians or prefer something different from regular pizza.

The first time I had this recipe was at a gathering at a friend's home. The hostess of the gathering served this and I thought it was simply great, especially since I'm not a big meat eater. This recipe is incredibly easy and the only baking involved is baking the crust. Even that isn't hard to do with this recipe, since it uses canned crescent dinner roll dough! You press out the dough onto a baking sheet and bake it until lightly browned. You then combine mayonnaise with ranch dressing mix and cream cheese. This is spread over the baked dough. You now top with with Cheddar cheese, shredded carrots, broccoli and cauliflower. It now goes into the refrigerator and in a few hours, it's set to go!

This is a handy recipe to make for a gathering since it has to be made ahead and chilled before serving. This makes it easy on the host of the party, since this can be made ahead and be out of the way so you can focus on preparing other things for the gathering. Whether it's served as an appetizer or a main dish, it's really a tasty pizza!

So, let's get things ready for this weekend, beginning with this pizza:


  • 2 cans (8 oz.) crescent rolls
  • 1 cup mayonnaise
  • 1 pkg. Ranch dressing mix
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 cups grated sharp Cheddar cheese
  • 1 cup shredded carrots
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower

Spread crescent rolls thinly onto a pizza pan or rectangular cookie sheet. Bake according to crescent roll directions, baking only until light brown. Cool. Mix the mayonnaise, dry dressing mix and cream cheese until smooth. Spread over the prepared crust. Top with Cheddar cheese, carrots, broccoli and cauliflower. Press lightly. Cover and chill for about 3-4 hours. Cut into squares or wedges of desired size. Yield: about 24 appetizer servings or 8 main-dish servings.
