Gluten-Free Mexican Choklat Cookies

2 1/2 cups of all-purpose gluten-free flour

-1/2 teaspoon of salt (or sea salt)
-1 tablespoon of Abuelita Mexican hot chocolate powder or ground cinnamon

-1/4 teaspoon baking powder
-1/2 teaspoon of cayenne pepper

-1/2 teaspoon of chili powder
-1 1/2 cups of butter at room temperature

-1 1/4 cups of brown sugar
-1/2 cup of coconut sugar (or granulated sugar)

-2 eggs at room temperature
-1 teaspoon of vanilla

-3-4 Power Crunch Choklat or Dark Choklat gluten free bars chopped in chunks

Preheat oven to 350 degrees. Mix and set aside dry ingredients in one bowl. In an electric mixer, cream together eggs and brown sugar until light and fluffy (sugar should be dissolved). Add eggs one at a time until fully incorporated while scrapping down the bowl after each addition. Add in vanilla and quickly mix, then incorporate dry ingredients in 2 parts. Lastly, add Power Crunch Choklat Bar chunks.

Use a large spoon to scoop dough onto cookie sheet, leaving about an inch between each cookie. Bake for 10-12 minutes. Transfer cookies onto a cooling rack and repeat until dough is gone. Will make roughly two dozen cookies.
