Potato skins are a great appetizer to serve! Everybody enjoys finger foods! Here is an easy recipe for potato skins. I try and simplify cooking when I can and this recipe is as simplified as it can get! Enjoy!
Potato Skins
- 6 whole potatoes
- Butter
- 1 bag of shredded cheddar cheese
- 1 container of sour cream (8 ounces)
- 1 bag of pre-cooked bacon (or you can cook about 12 pieces) **
Cook your potatoes in the microwave. The general rule is 7 minutes for the first potato and 3 minutes for each additional one. So, for 6 potatoes, you would cook them for 22 minutes total.
Cook your bacon while your potatoes are cooking, unless using pre-cooked.
Preheat your oven to 350°.
Let potatoes cool until they are cool enough to the touch.
Slice each potato in half, long ways.
Then, take a spoon and spoon out the potato from the skin (you can reserve the potato and make mashed potatoes another night).
Place skins on a foil covered cookie sheet.
Place a pat of butter or margarine in each skin.
Then, place one piece of bacon, break bacon in half and place both halves in a skin.
Sprinkle each potato skin with cheese. Be sure to fill up the remainder of your skin with the cheese; it melts down while baking.
Bake skins for about 10 minutes or bake until cheese has melted.
Place skins on a platter and serve your sour cream on the side for guests to add for themselves!
** If you do not care for bacon, just omit that from the recipe. I do!
