This is a potato salad like no other. It combines ingredients not usually found in traditional potato salad recipes, yet these ingredients are so delicious. They meld together to become a truly wonderful taste.
Although there are many types of potatoes, Yukon Gold is perfect for this and most other recipes. There’s a distinct buttery rich flavor to these potatoes that is perfect for whatever you plan to make. Yukon Golds were developed in Canada, and are now nationally known in the U.S. and are available at almost any grocery store.
Potato Salad Recipe
Ingredients for Potato Salad:
- 4 large Yukon Gold potatoes
- ½ cup golden raisins
- 2 tablespoons green onion, chopped (optional)
- 1 Granny Smith apple, chopped
- 2 tablespoons pistachio nuts, chopped
Ingredients for Potato Salad Dressing:
- 1 tablespoon curry powder
- ¼ cup apple cider or juice
- 1 cup mayonnaise
- ½ tsp. salt
- ½ tsp. pepper
Directions for making Potato Salad:
Wash the potatoes, then cut them into cubes (you don’t have to peel them first). Put them in a saucepan, sprinkle them with 1/2 tsp. of salt, and fill the pan with water so that it covers the potatoes. Put a lid on the pan and bring the water to a boil over high heat; lower the temperature to medium. Cook until the potatoes are fork tender. Drain well in a colander and let the potatoes cool to lukewarm (don’t cool too much – if the potatoes are still slightly warm the dressing will absorb into them to make a better potato salad).
Place the cooled potatoes in a bowl with the raisins, onion (if using), apple, and pistachios. Gently stir the dressing (recipe below) into the potato mixture. Refrigerate for 30 minutes prior to serving.
Potato Salad Dressing: Whisk together well the curry powder, apple juice, mayonnaise, salt, and pepper.
