Nothing goes better with eggs and bacon than potato pancakes. A southern favorite, these crispy cakes are made from mashed potatoes. A few ingredients and you have a new family favorite!
Potato pancakes are a great way to serve those leftover mashed potatoes from dinner the night before. With dinner or breakfast, potato pancakes are a great way to serve a potato dish that will go with most everything.
This recipe is for potato pancakes with flair - the addition of cream cheese goes well with the potato taste. It brings out the green onion flavor as well. I use the green onion and chive cream cheese to add even more flavor.
To make potato pancakes with flair, you will need:
3 cups of mashed potatoes
2 green onions, diced
1/4 of a small container of cream cheese - green onion and chive or regular
1 egg
1 cup of flour
1 tablespoon of butter or margarine
salt to taste
pepper to taste
various seasonings can be added for extra flavor
Mix 3 cups of mashed potatoes in a bowl. Add the flour and mix well. The flour should be incorporated well into the potatoes so there are no "pockets" of flour when you bite into the pancake.
Add the egg, green onion, and seasonings. Mix until thoroughly blended. Add the cream cheese and blend well. If the potato mixture is a bit dry, you can add another egg. The mixture should have a fairly thick consistency.
Drop a tablespoon of butter into a frying pan. When butter is melted, grab a bit of potato mixture( as large or small as you like), and flatten into a pancake. Place the pancake in the butter and fry until crispy brown on the bottom. Flip the pancake over and repeat on the opposite side.
Pancakes are done when both sides are browned and crisp. Serve with a spoonful of sour cream if desired.
Potato pancakes can be served as stuffed pancakes as well. Place a potato cake down on the plate and add sour cream, green onion, egg, or bacon if desired. Apply chosen toppings and place a second potato cake on top. Add a teaspoon of sour cream and sprinkle with parsley or green onion.
