This potato salad recipe is chocked full of eggs! You can add more or less of the ingredients to suit your taste. This recipe came from the mid-west.
Potato and Egg Salad
- 5 pounds potatoes
- 2 slices carrots
- 8-9 hard boiled eggs, cut
- 1 tsp. celery seed
- 2 tbsp mustard
- ¼ cup mayo
- ½ cup relish
Peel and cut potatoes into chunks. Boil potatoes in water to cook.
Cool and add ingredients.
Refrigerate.
