SOMERVILLE, MA - Posto, the popular Davis Square restaurant, recently became Boston and New England's first officially certified Neapolitan pizzeria, meeting all of the qualifications of the Associazione Verace Pizza Napoletana or True Neapolitan Pizza Association of Naples, italy.
Following inspection by Giulio Adriani of the Naples group and a series of grueling tests, Posto officially passed the certification. Among the requirements are baking the pizza in a wood-fired, domed oven at 485 degrees Centigrade, not using any type of mechanical rolling device, and not exceeding 35 centimeters for the pizza's diameter or a third of a centimeter thickness at the center.
The Association is a non-profit organization founded in June, 1984 in Naples where it seeks to promote and protect true Neapolitan pizza in Italy and around the globe.
