This recipe is a great way to enjoy succulent pork tenderloin with apples. Most any variety of apples will work with this salsa recipe.
Pork Tenderloin With Apple Salsa
- 3 T. brown sugar (firmly packed) divided
- 2 T. Dijon mustard
- 1 tsp. paprika
- 1/2 tsp. ground ginger
- 1 – 1-1/2 pork tenderloin
- 1 c. apples (diced)
- 1/4 c. apple juice
- 1/3 c. green pepper
- 1/4 c. green onion (sliced)
- 1/8 tsp. crushed hot pepper flakes
In a medium size bowl, combine the remaining brown sugar, apples, apple juice, green pepper, green onion and hot pepper flakes; set aside.
Preheat oven to 450 degrees. In a small bowl combine 2 tablespoon of brown sugar, mustard, paprika and ginger; mix well.
Place pork tenderloin on rack in broiler pan; spread evenly with half of the brown sugar mixture. Roast for 15 minutes
Remove pork from oven and spread with remaining brown sugar mixture; roast tenderloin for about 30 minutes. Insert meat thermometer in thickest part of meat, if thermometer registers 160-170 degrees, meat is done, otherwise continue roasting until temperate is reached. Cover tenderloin with aluminum foil and let set for 10 minutes.
Transfer pork tenderloin to a serving platter; slice and serve topped with salsa.
