Pork chops are one of those easy dinners that make a great week-day meal. This baked pork chop recipe is one of the easiest and you will be rewarded with a wonderfully tender and delicious pork chop that’s perfect for any occasion. Because it looks beautifully, this recipe will work well if cooking just for yourself, your family, or for friends.
Although this recipe calls for boneless pork chops, it doesn’t matter if you use bone-in – just bake it a little longer. Since pork has to be cooked through thoroughly before serving, there is a danger of cooking it too long. This is the reason some cooks prefer the bone-in chops, as they are thicker and the bone adds moisture to the meat. (The safest internal temperature of cooked pork is 145 degrees.)
Since pork has a tendency to toughness, this recipe calls for braising it – meaning first browning it on the stove, then cooking it covered in liquid. This method breaks down the fibers of the meat, making it tender and delicious.
Pork Chop Recipe
Ingredients for Pork Chops:
- 4 pork chops, 1/2-inch thick boneless chops
- ¾ cup ketchup
- ¼ cup brown sugar, packed
- 1 tsp. vinegar
- 2 lemons
Directions for making Pork Chops:
Preheat the oven to 325 degrees.
In a large skillet over medium heat, brown the pork chops on both sides (let them brown on each side for approximately 1 – 2 minutes) – be careful not to burn them. Remove the chops and place them in a single layer in a shallow baking dish.
Combine the ketchup, brown sugar, and vinegar – stir until combined. Pour the mixture evenly over the chops. Cut 4 slices from one of the lemons and place one slice on top of each of the pork chops. Squeeze the juice of the other lemon evenly over the pork chops.
Cover tightly with aluminum foil and bake for 30 minutes. Uncover, baste each of the pork chops with the liquid, and continue baking uncovered for 10 minutes more. Serve immediately.
