While pomegranates are delicious, they are also a pain to eat. When you’re craving that tart yumminess, give this recipe a go instead:
2 cups pomegranate juice
1 cup sugar
2 tsp. lemon juice
2 cups heavy cream
1 cup milk
3 tbsp. cornstarch
1/8 tsp. salt
¾ cup chocolate chunks
Over medium heat, mix together pomegranate and lemon juices with sugar. Stir well until dissolved. Once mixture has reached a boil, reduce heat to a simmer and cook for about half an hour until it has been reduced by half. At this point, remove from the heat and cool for 30 minutes.
Heat the milk over medium heat. Separately, in a bowl, whisk cornstarch and cream. Slowly add to the heated milk until well combined. Once everything has dissolved together, remove from heat, continuing to stir while cooling for several minutes. Stir in the pomegranate mixture and add in the salt. Chill for several hours.
Add to your ice cream maker along with the chocolate chunks. Follow instructions as come with your machine. Chill for at least 30 minutes in the freezer after to allow the consistency to set so it is scoopable.
