While I was out in my garden today playing in the cabbage patch, I was thinking how many people really realize how beneficial cabbage really is? Have you ever wondered how people 100 or more years ago made it through a winter or survived when sailing across the ocean?
The answer is simple the had cabbage. Sailors used it to keep scurvy away. Cabbage has so many healing properties to it. It's loaded with vitamin C and full of roughage. You can eat it raw in a salad or fry it in a pan, stuff it and bake it. It's all good. You can learn more about cabbage and it's healing properties here.
Today I harvested 4 heads of cabbage and made a healthy version of:
FRIED CABBAGE and NOODLES
1 pound bag of wavy rice noodles (or use egg less noodles)
4 lbs. Fresh savoy cabbage
2tbsp. coconut oil
2tbsp. sea salt
1-Cook noodles following directions on package:
2-Wash and then chop up cabbage. Then using a very large stock pan add 2tbsp. coconut oil and all cabbage and 2tbsp. sea salt. Let this cook until all cabbage has wilted. taste. Add salt and seasonings to your liking.
3-Mix noodles and cabbage together and serve.
