William Gilbert is doubling his efforts to serve Plattsburgh-area fans of Thai cuisine. Gilbert told local media this week that renovations are nearly complete at the former Paradise Pizza building, located at 386 Route 3 in the Town of Plattsburgh. When they are completed within the next few weeks, he will debut a second Sawatdee Thai iteration of his present downtown venue.

The two Sawatdee restaurants will not be identical. For example, some new dishes such as the traditional Vietnamese noodle bowl called pho will be added to the menu. The new, smaller 27-seat space is designed more for takeout than eat-in service, and will have separate lunch and dinner menus.

Gilbert told the Press-Republican newspaper "he was intrigued by the challenge of operating an independent eatery on the Route 3 corridor, which features numerous chain restaurants. Gilbert said it helps that they have a loyal following at the downtown location, which has also attracted frequent visits by Canadian tourists. 'They are looking for something that isn’t a chain'.”

Hours: 11:30 a.m. to 2:30 p.m. for lunch, 4 to 9 p.m. for dinner Mondays-Fridays; 11:30 a.m. to 9:30 p.m. Saturdays; noon to 8 p.m. Sundays. At the original Sawatdee, located at 15 Bridge Street, hours are the same.
