But Mo'ommmmm! I don't like chicken anymore! My tastebuds have changed...My broccoli is touching my macaroni! My ketchup is touching my noodles! I'm suddenly not hungry for this..... If you are a Mom or Dad of children under the age of 16, I am sure you have heard these or similar complaints on an almost daily basis from one or all of your children. As parents we struggle with the daily question of "what can I make for dinner?" or more like "What can I make for dinner that will make everyone, including me, happy?". I find that when my kids enjoy their meals, I become a better, happier person. Here are a few go to recipes that I have found almost always work for my kids.

Beef tips with Noodles

1 lb of beef tips ( I usually buy a small sirloin or filet and cut it into small bite size pieces)

3 cups of egg noodles - cooked

1 large jar of beef gravy

Instructions:

Brown the beef tips in a skillet over medium heat. While the beef tips are cooking, boil a pot of water and then cook your egg noodles according to the package directions. When beef tips are done to your liking, remove them from the heat. Add the gravy and mix in the noodles. Heat the mixture through and serve with crescent rolls or buttermilk biscuits.

Karen's Casserole

1 lb lean ground beef

1 large can of petite diced tomatoes (unseasoned)

1 cup of sharp cheddar cheese shredded

3 cups of elbow macaroni

Instructions:

Cook ground beef until it is no longer pink over med high heat. Drain meat , then add the can of diced tomatoes. reduce heat to low and let the meat and tomatoes cook together until heated through.

cook the elbow macaroni while you are browning the meat according to package directions. Drain water then add the noodles to the heated meat and tomatoes.

Heat the oven to 350. Spray non stick cooking spray on the bottom of a casserole dish. Cover the bottom of the dish with a layer of the noodle, meat and tomatoe mixture. Sprinkle a third of the cheddar cheese over the first layer. Next cover the cheese layer with salt and pepper to taste followed by another layer of the noodle, meat & tomatoe mixture. Repeat the layers until you fill the dish. Your final layer should be cheddar cheese.

Bake at 350 for 30-45 minute, or when the cheese is bubbly.
