Pistachio cake recipe

I remember having this cake at Christmas was I was a young girl. This recipe has been in my family for many years. It is a different recipe, you do not see recipes like this too much anymore.

Pistachio Cake

  • 1 box yellow cake mix
  • 1 package pistachio pudding, instant
  • 1 cup club soda
  • ½ cup oil
  • 4 eggs, separated
  • 1 cup chopped nuts (I like walnuts)

Preheat oven to 350*.
Spray a tube pan with butter spray and dust with flour.
Mix all of the above ingredients together. (All except egg whites)
With mixer, beat egg whites until stiff.
Fold stiff whites into cake mixture.
Bake for 45 to 55 minutes. Until tooth pick inserted into center comes out clean.

Icing:

  • 1 package pistachio pudding, instant
  • 1 container of cool whip, thawed

Mix together and spread over entire cake when cool.

However, I remember the cake not being iced. When a piece was cut and served, a dollop of icing was added to the top of each piece.

    The cake had a great taste, not overly sweet. For some reason the icing wouldn't spread evenly on the cake, any suggestions? Also the egg whites didn't get stiff after beating. Overall everyone liked the cake and I will make it again.

    RLC, I am so happy you enjoyed this cake! Sometimes, if egg whites are beaten too much, they can fall. Also, if the whites are too cold and not at room temp, they may not get stiff. As far as the icing, the only thing I can think of was that is was not defrosted enough to spread?? If that was not the case, next time instead of icing the cake, spoon a dollop of icing onto each sliced piece :-)
