We can now officially declare the end of a long, hard winter and say "hello" to spring! I know many of you share my same feeling in that it was indeed a difficult winter across most of the country. Now that spring has officially arrived, let's think of foods that are colorful and lift our spirits!
With Easter just around the bend and the upcoming flurry of outdoor entertaining, parties and gatherings, you maybe would like to serve a cold drink that's refreshing and eye-catching. With it being spring, how about something in a pretty pastel pink? The recipe I'm sharing is for "Quick Pink Party Punch" and it's a pretty drink as well as one that's creamy and refreshing. In fact, I've often found people who drink this will want a second serving of it.
It only has three ingredients in it, so making it isn't a big deal at all! You use pineapple sherbet and let it thaw slightly. This goes into your punch bowl or into a large container that can be transferred to a pitcher, if you choose to serve it that way. In goes cranberry juice cocktail and some ginger ale. That's it! You now have a creamy and wonderful cold beverage that's a pastel pink color, just the color for spring!
This recipe makes about 20-25 punch cup servings. What's really handy about this punch is that you can make it as you need it. Therefore, there's no waste. This is a punch that would fit in with a bridal shower, graduation reception, or any occasion when you need a large amount of something to drink.
You'll see that the pineapple sherbet is thawed slightly. Avoid letting it thaw too much as you want it the punch to have some chunks of sherbet to add to the creaminess of the punch, which I find is what makes this especially good. Make certain that the cranberry juice and the ginger ale are both cold so that it can be mixed and served right away, nice and chilled!

QUICK PINK PARTY PUNCH
- 1/2 gallon pineapple sherbet
- 8 cups cranberry juice cocktail, chilled
- 4 cups ginger ale, chilled
Slightly soften the pineapple sherbet and place in a punch bowl. Add the cranberry juice and ginger ale and stir only enough to combine. Serve immediately. Yield: about 20-25 punch cup servings.
