Pink champagne cupcakes for New Year's Eve

Here is a recipe that is perfect for your New Year's Eve party tonight! Not only is it festive, but it's a doctored-cake mix recipe, so even though it's last minute, you'll have plenty of time to whip a batch of these up before the ball drops!

For the cupcakes, you will need:

1 box of white cake mix

1 1/4 cups champagne (This doesn't have to be expensive champagne. In fact, I recommend using a moderately priced bottle.)

1/3 cup vegetable oil

3 egg whites

3 drops of red food coloring

For the frosting, you will need:

1 stick of unsalted butter, softened

4-5 cups of confectioner's sugar

1/4 cup champagne

3 drops of red food coloring

1/2 teaspoon vanilla extract

For decorating, you will need white sanding sugar and decorative cupcakes liners. Plain white ones will work, but this is New Year's Eve! Be festive!

Preheat oven to 350 degrees.

Line two 12-muffin pans with decorative cupcake liners and lightly grease with cooking spray.

Mix all of the cupcakes ingredients together until well-combined. Don't over-mix the cake batter.

Bake for approximately 17-20 minutes, or until a toothpick inserted into the center comes out clean.

Allow to fully cool before frosting.

With an electric mixer, cream the butter and sugar together.

Slowly beat in the champagne, food coloring and extract.

Using a piping bag and tip, frost the cupcakes and sprinkle with the sanding sugar. Edible pink or gold glitter would also look lovely!
