Pineapple in a refreshing drink

If you live in the southeast, you know that our temperatures have been pretty erratic! Between warm, or even hot, one day and brisk and cool the next day, we know that the warmer temperatures are coming. And as the temperatures rise, you know that's going to call for foods that refresh and renew our palates.

Drinks that have a fruit flavor are always refreshing and as we get well into spring and with summer just around the bend, a fruit drink will certainly hit the spot when it becomes hotter. Fresh pineapple is a fruit we tend to connect to the warmer climates, since of course much of our pineapple is grown in Hawaii, where it's warm all the time. Have you considered that this luscious fruit can be made into a refreshing drink? It can and with little effort, too! "Fresh Pineapple Mist" is a very refreshing drink that will taste very good as our temperatures warm up.

This recipe calls for a fresh pineapple. These can be found quite easily in the produce section of most any grocery store. To prepare a fresh pineapple, you will need a long, very sharp knife. You begin by removing the crown, which is the part with the thick leaves on tip. It's now cut in half lengthwise, then into fourths. With a smaller knife, pare the flesh from the shell and cut out the core of each quarter. Cut the fruit into large pieces. The pineapple pieces now go into the electric blender and are pureed. Then, all that you do is add cold gingerale, cold orange juice and some lime juice. This is all blended together and it's ready. Pour into chilled glasses and decorate with a cherry, a pineapple slice or a lime slice. It's cool and very refreshing!

This recipe makes four servings and can easily be multiplied for more. Leftovers will keep covered in the refrigerator for about a day or so. If you are looking to reduce calories, you can use the sugar-free ginger ale.

  • 1 fresh pineapple
  • 3/4 cup chilled gingerale
  • 1/4 cup chilled orange juice
  • 2 tablespoons lime juice
  • cherries, pineapple slices, or limes slices for garnishing (optional)

Cut pineapple in half with a long, sharp knife. Cut again into quarters. With a smaller sharp knife, pare away the flesh of the fruit from the shell and slice out the core. Cut the fruit into large chunks. Place about four chunks in the electric blender and puree until smooth. Repeat until all is pureed, then return all the puree to the blender. Add the gingerale, orange juice and lime juice. Blend at low speed until blended. Serve in chilled glasses with your choice of garnish. Yield: 4 servings.
