This week, Pincho Factory will submit their proposal to the City of Hialeah outlining their plan to convert the well-known Koky’s Barbecue Ranch, located at 4950 W 12th Ave, Hialeah FL 33012. This will be Pincho Factory’s first free-standing building. It will also be larger than the first and second restaurants combined, with a seating capacity of 100.
Koky’s has a 40-year history in Hialeah, and many know of its iconic sign with the roasted pig. The owners of Pincho Factory spent most of their youth living in the area, so they have a soft spot for Koky’s and all that it stood for. As a result, they plan to incorporate the sign as part of a mural inside the new building. “Even though I was born in Chicago, I grew up in Hialeah, so this has a special meaning to me. I went to high school just two miles away from there and have great memories of that location,” says Nedal Ahmad, part owner of Pincho Factory. Pincho Factory plans to break ground soon and wrap up construction of their Hialeah location by the end of this summer.
Pincho Factory has been well received, from the minute they opened the very first location in Westchester; their Coral Gables location has been equally successful. Since those two openings, the owners have received requests for new locations from people living as far North as New Jersey. The owners are actively looking for qualified prospects interested in franchising, but the process will be very strict.
