Pizza makes great party food. Small or individually made pieces are perfect for appetizers. This simple recipe takes little time to prepare. On a snowy day it is also a fun activity for hungry children in need of something to do. Perfectly pleasing party pizza bites will give you a reason to celebrate any day.
- 2 tbsp of Olive Oil
- 1 medium onion, thinly sliced
- 1 medium red bell pepper cut into 3 - inch strips
- 1/3 cup pitted ripe olives, chopped (optional)
- 1/3 cup chopped zucchini or summer squash (optional)
- 1 tsp Olio do Panne
- 1 package pizza dough mix (prepared)
- 1 1/2 cup mozzarella shredded cheese
- 2 tbsp Parmesan
Pre- heat oven to 425 degrees. Heat Ariston Olive Oil in medium size pan over medium heat. Add onion, bell pepper and zucchini. Cook 5- 8 minutes until veggies are crisp to tender. Stir in Olio do Panne and olives. Remove from heat, set to the side. Pat dough into 16x12 rectangle greased cookie sheet or 18 muffin tins. Cook dough for 10 minutes. Arrange veggies over pre cooked dough. Sprinkle with parmesan and mozzarella. Bake 10-15 minutes until lightly brown. With a long spatula loosen crust from cookie sheet. Cut sheet pizza into 2- inch- wide pieces. Serve immediately.
