Skuna Bay conducted a search for the best regional chefs from a Skuna Bay restaurant to represent the company at the Kentucky Derby. Two chefs were the final winners, and the winner from the Midwest Chef Challenge is Edward Sura, now chef de cuisine on behalf of Chef Paul Virant at Perennial Virant in Lincoln Park. Chef Edward takes the farm seriously, using only the freshest ingredients and obtaining produce from Chicago's Green City Market, located just across the street from the restaurant.
The other winner, from the Pacific NW Chef Challenge, is Sarah Schafer from Irving Street Kitchen in Portland, OR.
