Peppermint mocha brownies for the holiday season

2 sticks butter, melted
1/3 cup instant coffee
2 cups sugar
3/4 cup cocoa
4 eggs
1 tbsp. vanilla
1 tbsp. peppermint extract
1 cup flour
1/2 tsp. baking powder
1/2 tsp. salt

Frosting Ingredients
8 cups powdered sugar
2 sticks butter, room temp.
4 tbsp. milk
1 tbsp. peppermint extract
4-6 drops red food coloring

Preheat oven to 350º and grease a 13x9 baking dish. In one bowl, sift together all of the dry ingredients except the sugar. In another bowl, combine the melted butter and instant coffee, stirring until the coffee has dissolved. Stir in the sugar until that has dissolved as well. Whisk in the eggs, vanilla, and peppermint. Slowly whisk in the dry mixture until well combined. Pour this batter into the greased dish and bake for 20-25 minutes.

To make the frosting, combine the butter and powdered sugar in a mixer. Pour in the peppermint and milk, then turn on to high speed until the mixture is fluffy. Add in the red food coloring to your desired pink or red color. Frost the cooled brownies, then chill before serving.
