Peppermint Kris Kringle crinkle cookies

This is the time of year when all the kiddies look forward from a visit from Kris Kringle also known as Santa Claus. In place of the usually cookies left on a plate for the jolly old man to nibble on the children would love to leave a few peppermint Kris Kringle crinkle cookies for him instead. Knowing these cookies are named after him and will be served for Santa to enjoy will add an extra smile to their faces. This added incentive may just get them off to slumber-land faster.

Ingredients:

  • 1/3 cup of flour
  • 2 tablespoons of unsweetened cocoa powder
  • 7 ounces of dark cacao
  • 2 tablespoons of unsalted butter
  • ¼ cup of Nutella
  • 2 large eggs
  • 1 egg white
  • ¾ cup of sugar
  • 1 teaspoon of peppermint extract
  • 1 cup of confectioner’s sugar

Directions:

  1. Preheat oven to 350’.
  2. Whisk together the flour and cocoa powder and set bowl aside.
  3. Melt together the butter, Nutella and chocolate/cacao over a double boiler on a low heat.
  4. Once the chocolate mix is melted, remove from stove and set pan aside.
  5. In a mixing bowl mix the eggs, the egg white and sugar together with an electric mixer until fluffy. The mixture will be thick and contain air bubbles.
  6. Mix in the peppermint extract.
  7. Fold gently the egg and chocolate mixtures together until just combined.
  8. Now fold in the flour a little at a time until combined and the cookie dough color is consistent throughout.
  9. Refrigerate the dough ball for 20-30 minutes.
  10. Put the confectioner’s sugar in a large mixing bowl.
  11. Remove cookie dough from the refrigerator and use a teaspoon or tablespoon full of dough and roll it in a ball gently then cover it in the confectioner’s sugar.
  12. Place the sugar covered dough balls on a parchment lined cookie sheet approximately 2 inches apart from each other.
  13. Bake in the over for 10-14 minutes.
  14. Remove cookies from oven and let cool for 2 minutes.
  15. Now use a spatula and gently press the tops of the cookies down since they puff up when baking.
  16. Transfer the cookies to a wire rack to cool completely.
  17. Once the cookies are cool transfer them to a serving tray, cookie jar or air-tight container until ready to serve.
  18. Enjoy!
