Pressure cookers scared me as a child. The turbulent hissing and clinking noises made me anxiously watch the strange pot as if it were to blow up and take half the kitchen with it, i never witnessed this to happen. I wasted lots of time when i should have been playing outside or anything else an 8 year old does.

Ive never seen Rachel Ray use a pressure cooker, never really watched her long enough to see but i imagine 10 minute meals didn't make for an interesting show, regardless; the show starts when the pressure cooker is opened and the hissing has given way to silence as you admire the magical protein or object nestled snugly in the pressure cooker, begging to be eaten and savored. Most Chefs in the area have used and still use pressure cookers to cut down prep and lag times. For home cooks its the best way for a 1 hour pot roast.For best results,browning your proteins first and then using the pressure cooker to finish it off, for wonderfully braised unctuous cuts of meat.
my favorite Recipe for beef short ribs:
4 lbs beef short ribs( great with shanks, cheeks or tongue)
1 tbsp each garlic, celery, sweet onions and carrots , rough chop, lemon zest, rosemary and parsley, pinch coarse black pepper.
1 cup beef stock, diced tomatoes, 1cup water and 1 glass red wine
Add all ingredients to pressure cooker, follow manufactures instructions, cook for one hour
serve with potatoes, grain, or rice of choice
