About 2 years ago, I came up with this recipe. I used wheat flour and took some to my neighbor to have a taste. They loved these! They could not even tell that they were made with the wheat flour!
PeCran – Brown Sugar Scones
- 2+ cups flour (white or wheat)
- ½ cup packed brown sugar
- ¾ tsp salt
- 6 Tbsp butter or margarine
- ½ cup dried cranberries
- ¼ cup chopped pecans
- ¾+ cup milk
- Turbinado sugar
Preheat oven to 400*
In bowl mix, flour, brown sugar, baking powder and salt.
Using pastry blender or fork, cut butter into flour mixture until it resembles coarse crumbs.
Stir in cranberries and pecans.
Add milk (and maybe a little extra flour) until mixture holds together when pressed.
Flour bowl the mixture is in and shape mixture into a ball.
Flour a knife and cut mixture into 8 wedges (the best you can).
Place wedges on baking sheet, sprayed with cooking spray.
Brush wedges with milk and sprinkle with Turbinado (raw) sugar.
Press to adhere.
Bake for 15-18 minutes or until golden in color.
Cool 5 minutes before eating!
