Peanut noodle dish with a kick

4 oz. brown rice noodles
1 tbsp. olive oil
½ onion
4 cups veggie mix – cauliflower, carrots, broccoli
For topping: bean sprouts, cilantro, lime juice

Sauce Ingredients
2 tbsp. peanut butter
1/3 cup vegetable broth
½ tsp. red chilies, crushed
1 tbsp. honey
1 tsp. ginger
1 garlic clove, minced
2 tbsp. soy sauce

In a medium bowl, whisk together the sauce ingredients. In a skillet over medium heat, cook onion in the olive oil for about 5 minutes, or until translucent. Add in the vegetables and cook for 2 minutes. Reduce heat and stir in the sauce you mixed together. Cook covered for about 6 minutes or until veggies are cooked through. Meanwhile, cook the noodles according to package directions. Drain and stir into the veggies. Top with bean sprouts, cilantro, and lime juice to serve.
