If you are a peanut butter fanatic like me, you will love this peanut butter pie recipe. It's easy as "pie" to make with just a few ingredients. Only the crust has to be pre-baked so you won't have your oven on long which is great for these hot summer months.
Easy Peanut Butter Pie
- 1 pre-made pie crust like Pillsbury
- 1 large box of instant chocolate or vanilla pudding
- 3 c. cold milk
- 3 c. powdered sugar
- 1/2 c. peanut butter, crunchy or creamy
- 1 small container Cool Whip
Bake pie crust according to package directions and cool. Mix powdered sugar and peanut butter in a bowl with a pastry blender or fork until coarse crumbs form. Sprinkle one cup crumbs into the baked pie shell. Mix pudding and milk with an electric mixer in a medium bowl. Pour pudding over crumb mixture and refrigerate until set. Spread Cool Whip on top of pudding and sprinkle peanut butter/powdered sugar crumbs liberally on top. Any leftover crumbs are good on ice cream. Refrigerate any leftover pie.
