Peanut butter is used in so many different cooking recipes from decadent desserts to delicious dinners or savory snacks. Not only is peanut butter good for you, it's delicious! It is said that the average child will consume around 1,500 peanut butter and jelly sandwiches by the time they are 18! That sounds crazy, but most likely true. Peanut butter is a staple for most families.
This recipe for Reese's Peanut Butter Cup Cookie Dip sounds amazing!
- 1/2 cup unsalted butter
- 1/2 cup light brown sugar
- 1/4 cup creamy peanut butter
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup semi sweet mini chocolate chips
- 8oz pkg Reese's peanut butter cup Minis, or about 1 1/2 cup chopped Reese's cups
Melt butter in a saucepan over medium heat. Stir in sugar and heat until sugar dissolves, stirring constantly for about one minute. Remove from heat and immediately add vanilla and allow to cool to room temperature-this is a very important step.
In a large mixing bowl, beat cream cheese with powdered sugar and peanut butter until creamy- for about 3-4 minutes. Add brown sugar mixture- that has cooled to room temperature. Mix until combined. Fold in mini chocolate chips and mini Reese's cups. You can serve immediately or store in the refrigerator until ready to serve. Enjoy with pretzels or animal crackers.
