My mom used to make this cake when I was a child. I'm not sure where she got the recipe from. You can't go wrong with peanut butter! This cake doesn't need frosting. It has a crumb topping with chocolate chips that would be a wonderful ending to an evening dinner.
Peanut Butter Crumb Cake
- 2 1/4 c. flour
- 2 c. brown sugar
- 1 c. peanut butter
- 1/2 c. butter, softened
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 3 eggs
- 1 c. milk
- 1 tsp. vanilla
- 1 c. chocolate chips
Crumb together in a large bowl flour, brown sugar, peanut butter, and butter. Reserve 1 1/4 c. crumbs. To the rest of the crumbs add baking powder, baking soda, eggs, milk, and vanilla. Mix with an electric mixer until well incorporated. Pour batter into a greased 9x13 pan. Top with the reserved crumbs and chocolate chips. Bake at 350 degrees for 35 to 40 minutes.
