This soft, delicious peanut butter cookie is made with only three ingredients! The middle is nearly like fudge and the outside has that slight bit of crispness that only the best cookies have. Peanut butter is one of those ubiquitous ingredients we all have around the house. That butter made from grinding peanuts has been enjoyed by people through the centuries (the Aztecs were known to eat it). Harvey Kellogg of cereal fame patented a process for making nut meal in 1895, but the first known patent for peanut butter was issued in 1884 to a gentleman from Montreal, Canada for the finished product of peanut butter.
Whether your preference is smooth or crunchy, either will work well in these cookies. For just a little bit of crunch, use half smooth and half crunchy.
Easy Peanut Butter Cookie Recipe
Ingredients for Easy Peanut Butter Cookies:
- 1 cup peanut butter (smooth or crunchy)
- 1 cup sugar (plus a little more for the tops)
- 1 egg
Directions for making Easy Peanut Butter Cookies:
Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper or non-stick foil. (If you don’t have either of these, use an ungreased cookie sheet.)
Using an electric mixer, whip together the peanut butter, sugar and egg until they are well-incorporated.
Form the dough into 1-inch balls. Dip the top of each ball into a little bit of sugar. Place each ball sugar-side up on a cookie sheet. (DO NOT FLATTEN WITH A FORK.)
Bake for approximately 7 - 8 minutes. Do not overbake. Remove the cookie sheet from the oven and let it set for about 5 minutes before removing the cookies. Cool them completely on wire racks. Enjoy!
