Peanut butter ball recipe

These are so rich and wonderful. My Aunt makes these every year for Christmas. She would assemble these HUGE cookie trays heaping full with cookies and candies of all kinds. Growing up I remember eating these by the dozen. I would sneak back to the cookie platter and sift through until I could find one. Then, I would sneak with the cookie away from the table, find a little corner and eat it…one after the other after the other. Ah, the good old days!

Peanut Butter Balls

Filling

  • 2 cups peanut butter
  • 2 cups confectionary sugar
  • 2 cups crisp rice cereal
  • 1 stick of butter, melted

Mix all ingredients together and roll into bite sized balls.
Place on wax paper lined cookie sheets.
Put in refrigerator as you make the coating.

Coating

  • 8 ounces Bakers chocolate
  • 1 cup semi-sweet chocolate chips
  • 3 tbsp paraffin (baking wax)

Dip balls into chocolate mixture and place back on wax paper lined cookie sheets.
Put in the refrigerator to harden. Store air tight in the refrigerator.

    My grandmother used to make these as well every Christmas and still does (minus the cereal). She called the buckeyes. My kids LOVE them. She still sends us a bunch every year at Christmas time.
