Peanut butter and chocolate for pizza fans

We're now on the countdown to Super Bowl Sunday and from what I've seen and heard, there will be parties and celebrations going on everywhere for this big event. I mentioned earlier this week that pizza is a very popular food at Super Bowl parties, so all this week, I've been sharing pizza recipes that would go well at a Super Bowl party that many are planning for this weekend. I've given two dessert pizza recipes this week and today, I have one more. If you love chocolate and peanut butter, then you'll love the recipe for the "Chocolate Peanut Butter Pizza" that I'm giving. This is actually more like a giant cookie, but it does look like a pizza since it's made in a pizza pan. This would be a fun recipe to have children help make. The crust portion is basically a peanut butter cookie dough. This is spread over the bottom of the pizza pan and is baked. While it's hot, it's topped with miniature marshmallows and chocolate morsels. It goes back into the oven and bakes a bit longer. When it's cooled, it's ready to cut and devour!

Though the recipe calls for semi-sweet chocolate morsels, if you wanted to use a combination of these and peanut butter morsels, that would give more of a pronounced peanut butter flavor. The peanut butter used in the crust portion can be either creamy or crunchy, depending upon your preference. I don't recommend using the reduced-fat peanut spread as this is a different consistency and to me, doesn't have as good a flavor as regular peanut butter. Use the regular version and you'll have no questions about its success!

CHOCOLATE PEANUT BUTTER PIZZA

  • 1 stick butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 2 cups miniature marshmallows
  • 1 cup semi-sweet chocolate morsels

Preheat oven to 375 degrees. In a large bowl, cream the butter with both sugars and the peanut butter. Add the egg and vanilla extract and cream well. Stir in the flour. Press this dough over the bottom of a 12 inch pizza pan that has been greased, forming a ridge along the edge. Bake for 10 minutes. While hot, top with the marshmallows and chocolate morsels. Return to the oven and bake an additional 5-8 minutes until lightly browned. Let cool before slicing. Yield: 6-8 servings.
