In many southern homes, there's a special fruit salad that is considered a real favorite....ambrosia. This fruit dish is most commonly served at Christmastime. In fact, many southerners believe that the holidays aren't complete without this salad gracing the holiday table. Some southern cooks observe ambrosia so reverently, it is often only served in a special glass or crystal bowl designated specifically for this dish.

Though we're now into the month of June and the Christmas holidays are still months away, let's think about the fresh peaches that are making their way into stores and produce stands and turn them into "Fresh Peach Ambrosia". This can be a summertime ambrosia, combining peaches along with some of the classic ambrosia ingredients. Traditionally, ambrosia contains oranges along with bananas, coconut and sometimes nuts, marshmallows and sour cream. There are many variations of this favorite salad, yet this version incorporates some of the flavors of the original, including bananas and coconut.

When you review the recipe, you'll see that it only have five ingredients. Believe it or not, this is all the recipe calls for. This is a refreshing salad that would go very well with any dish that may be particularly salty or rich. This is also the perfect dish to serve as a light dessert. Because this recipe is modest in calories, even someone watching their weight can enjoy this recipe.

So, try this wonderful ambrosia and start a new summertime tradition!


  • 2 pounds (about 8 medium) fresh peaches
  • 1 cup sliced bananas
  • 2 tablespoons sugar
  • 2 tablespoons fresh lemon juice
  • 1/3 cup shredded coconut

Peel and slice peaches. Combine peaches with bananas, sugar and lemon juice, stirring carefully. Cover and chill. Spoon into a serving dish and top with coconut. Serves 6-8.
