Are you ever n the mood for a salsa that's not of the tomato variety? On a recent trip to the State Farmer's Market I stocked up on peaches. This salsa still has the spice factor like tomato varieties with the sweetness kicked up a notch. It would be tasty on a grilled chicken breast or with tortilla chips.
Peachy Pineapple Salsa
1/4 c. onion, chopped
1 jalapeno, seeded and membranes removed (be careful to wash your hands thoroughly after this step)
3 peaches, chopped
1/8 tsp. salt
2 TBS. crushed pineapple
1 small bunch cilantro
Place all ingredients in a food processor and process till salsa-like consistency. If you like chunky salsa, you could cut all the ingredients up by hand and mix in a bowl.
