Who doesn’t love lemon bars? Those lovely bars of creamy lemon filling on a buttery crust are a favorite any time of year. Paula Dean sure knows how to cook! Her lemon bar recipe can best be described as “wow”. The crust provides a buttery shortbread and the filling is just the right creamy lemon flavor. This is such an amazing recipe, that it’s impossible to eat just one. Any time you take it somewhere, you’d better take the recipe -- your family and friends will want it.
When making these lemon bars, make sure that you use fresh lemons. Let them sit on the counter for at least an hour or two prior to juicing them. Then gently pressing down on each lemon with the palm of your hand, roll them around a little on the counter. This will help release the juice from each of the lemons, so you will get the maximum of juice.
Paula Deen’s Lemon Bar Recipe
Ingredients for Paula Deen’s Lemon Bars:
- 2 cups flour
- 1 cup powdered sugar
- Dash of salt
- 1 cup butter, melted
- 4 eggs
- 2 cups sugar
- 6 tablespoons flour
- 6 tablespoons fresh lemon juice (approximately 3 lemons worth)
- A little extra powdered sugar
Directions for making Paula Deen’s Lemon Bars:
Preheat the oven to 350 degrees. Lightly grease the bottom of a 9x13 baking dish – set aside.
To make the crust: Mix together the flour, powdered sugar, salt, and melted butter. Mix until well-incorporated. Pat the mixture into the bottom of the prepared baking dish. Bake for 20 minutes at 350 degrees. Remove from the oven, but do not turn the oven off.
To make the filling: Mix together with an electric mixer or a wire whisk the eggs, sugar, flour, and lemon juice. Pour the mixture onto the baked crust. Bake 25 minutes longer.
Remove from the oven. Put a little powdered sugar in a sifter or a sieve and sprinkle the warm bars evenly and liberally with powdered sugar. Cool completely and cut into squares.
