This appetizer is fast and easy – plan on about 9 – 10 minutes to make the meat mixture, and while that is cooking you can shred the lettuce and cheese, and chop the tomato. Kids love it!

Finding individual-serving sized bags of Fritos proved to be the most challenging part of making this recipe. Giant Eagle has them available in their take-out department, while Gordon Food Service has them available only by the case.

Makes 8 servings


2 pounds lean ground beef
2 (1 ounce) packages taco
seasoning mix

8 (2.5 ounce) packages corn chips (Fritos)
4 cups shredded lettuce
2 chopped fresh tomatoes
2 cup shredded Cheddar cheese
2/3 cup salsa
1 cup sour cream

Cook ground beef in a large skillet stirring over medium heat until browned.
After draining excess oil, mix in taco seasoning and prepare according to the directions on the package.

BEFORE opening the Frito bags, gently crush the corn chips.
Cut the top off the bags and spoon in some of the seasoned beef.
Top with shredded lettuce, chopped tomato, shredded Cheddar cheese, salsa and sour cream.

Serve with a plastic fork and a good napkin.
