The ingredients in this pasta salad recipe meld together so well that it’s hard to determine which makes it the best. The dressing is fabulous and easy to make, so don’t skip this important step as it brings the salad’s flavors together.

Pasta Salad Recipe
Ingredients for Pasta Salad:
- 7-ounce package of pasta (penne, cavatappi, tortellini, macaroni all work well)
- 3 ½ cups cole slaw mix (broccoli slaw mix is delicious, as well)
- 1 sweet onion, chopped (optional)
- 1 cucumber, unpeeled, seeded and diced
- 1 red bell pepper, diced
Salad Dressing Ingredients:
- 1 cup mayonnaise
- ½ cup sugar
- 1/3 cup white vinegar
Directions for Pasta Salad:
Cook the pasta according to package directions – drain, but do not cool completely. (The dressing will soak in to the warm pasta and make it wonderful!)
Dressing: Mix together the mayonnaise, sugar, and vinegar in a small bowl. Set aside.
In a large bowl, mix together the cooled pasta, cole slaw mix, chopped onion (if using), cucumber, and red bell pepper. Pour the mayonnaise mixture over the other ingredients and stir well to incorporate. Refrigerate for 2 hours prior to serving.
