The beauty of this recipe is the wonderful use of fresh tomatoes. You can use cherry tomatoes or chop up the larger variety – either will work. Tomatoes are so healthy for you and are always available.
The star of this recipe is the bread crumbs. It’s important to use Italian breadcrumbs (Progresso makes a really good one). Italian breadcrumbs are seasoned with oregano, basil, garlic, and all other herbs and spices germane to Italian cooking. These breadcrumbs perfectly create the taste and the texture of this dish.
When choosing a pasta form to use, pick one that has a thicker shape. Penne is a great choice, as its tubular shape is perfect for holding and complimenting the other ingredients.
Pasta with Fresh Tomatoes Recipe
Ingredients for pasta with fresh tomatoes:
- 3 cups cherry tomatoes, halved, or 3 cups chunked fresh tomato
- Olive oil
- Garlic powder
- 1 cup Italian bread crumbs (or a little more, depending on your preference)
- 1 15-ounce package penne or ziti
- 1 ¼ cup parmesan or Romano, shredded
- Dash of basil, dried or chopped fresh
Directions for making pasta with fresh tomatoes:
Butter an 8x8 baking dish, set aside. Mix together the tomatoes, a little olive oil, salt, pepper, and garlic powder. Put the tomato mixture evenly in the bottom of the baking dish. Sprinkle the bread crumbs evenly over the top of the tomatoes, drizzle with just a little olive oil. Bake at 375 degrees for 35 minutes. Cool for 5 minutes.
Cook the pasta according to package directions (keep it el dente by cooking it a minute less than the package directions). Drain the pasta, then stir the tomato mixture into the pasta. Stir in the parmesan cheese and a little more salt, pepper, garlic powder, and olive oil to taste. Throw in a dash of basil. Mix together and serve with more parmesan, a loaf of crusty bread and a crispy salad.
