The Party Girl Diet #1 Super Bowl Chili Recipe

Makes 6 – 8 servings (Suggestion: Double the recipe to make sure you have plenty of chili on hand for seconds)

Ingredients

  • 2 pounds ground turkey (lean) - you can also substitute lean ground beef to make traditional beef chili
  • 2 cans Red kidney beans or black beans - or 1 of each, rinsed & drained well (whole beans/no salt added)
  • 2 – cans diced tomatoes, drained, any low salt variety (Try fire roasted, diced tomatoes)
  • Olive oil (few tablespoons)
  • 4 chopped garlic cloves
  • 2 – diced onions (red, yellow, or white)
  • 1 – Fresh jalapeno pepper – seeded, minced (optional - but adds a nice “kick”)
  • ½ – jar tomato sauce (any low salt variety)

Seasonings:

  • 1/2 tsp chili powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. smoked paprika (optional - adds a subtle yet deep smokey flavor)
  • Fresh cracked black pepper and sea salt to taste
  • Can use 1/2 package of low-sodium chili seasoning in place of individual spices above

Plus Chili Bar Toppings:

  • 4 - 6 diced, fresh Roma tomatoes
  • 1 - 2 red onions chopped
  • 3 or 4 chunky, diced avocados (spritz with fresh lemon or lime to prevent browning)
  • 2 - 3 coarsely diced sweet peppers – all colors
  • 1 bunch fresh Cilantro - chopped
  • 2 cups shredded Cheddar Cheese

Party Tip: Have more chili bar toppings already cut and prepped on hand and ready to go for refills

Method:

Step 1: Combine the following ingredients in a large deep skillet or pot:

  • A few tablespoons olive oil
  • 4 chopped garlic cloves

  • 2 – diced onions (red, yellow, or white)
  • 1 – Fresh jalapeno pepper – minced optional. (Special note – be sure to remove the seeds first, and wash your hands well after discarding – they are dangerously hot) *You can also leave the hot peppers out of the main dish and serve them minced in a bowl with the other chili bar toppings for those who like their Chili spicy and hot.

Cook all of the ingredients in Step 1 together until onions are clear.

Step 2: Break up meat with spatula; stirring gently and frequently until all the meat is cooked through, consistency should be crumbly. Drain any remaining fat, and then proceed to Step 3 below:

Step 3: Add in the following ingredients and cook through until hot and bubbly:

2 cans of red kidney bean, black beans - or 1 of each (no salt added – any variety)

2 – cans diced tomatoes, drained, any low salt variety

Set up a fun “chili garnish bar” with the topping ingredients outlined in the "Chili Bar Toppings" section above in bowls with serving utensils.

For a fun n' easy clean up twist – serve the Party Girl Diet’s Chili in taco salad bowl shells, or ladle into (light) cornbread muffins that have had the middle scooped out.
