Party appetizers: Make-your-own mozzarella sticks

If you enjoy going to one of Buffalo’s neighborhood restaurants or national chains and getting an order of mozzarella sticks, you might be happy to know they’re easy to make at home. Here are a couple of variations on these cheesy treats that you can create in your kitchen for a party or for a snack.

Mozzarella sticks (adapted from Giada de Laurentiis, Food Network)

  • 1-1/2 cups Italian-seasoned bread crumbs
  • 1-1/3 cups grated Parmesan
  • 1 teaspoon salt
  • 2-16 oz. blocks of Mozzarella, cut into sticks 4” x 1/2”
  • 4 eggs
  • Vegetable oil to fry

**Note: you can also used string cheese, cut in half, for these sticks.

Combine bread crumbs, Parmesan and salt in a bowl; break eggs into a second bowl and beat. Dip cheese in egg (let excess run off), then in bread crumb mixture; complete all sticks then repeat process a second time. Place all sticks on a baking sheet and cover with plastic wrap; freeze for at least two hours, up to two days.

Heat oil in a frying pan or deep fryer. Fry sticks until browned, approximately one minute per side. Remove from oil and place on plates; serve with marinara sauce.

Mozzarella Puffs (adapted from allrecipes.com)

  • One can refrigerated biscuit dough (10 pieces)
  • 1 teaspoon dried oregano
  • 3 ounces Mozzarella, cut into 3/4 inch cubes
  • 2 tablespoons pizza sauce

Pre-heat oven to 375-degrees F. Separate biscuits on a baking sheet and make an indentation in the top of each one. Add oregano and Mozzarella to each indentation, then pinch dough around cheese to enclose. Flip over so pinched side is facing down and cover with pizza sauce. Bake for 10 to 12 minutes, until golden brown.
