2 chicken breasts
1 tbsp. parsley
1 tbsp. basil
½ tbsp. dill weed
1 garlic clove, grated
½ cup and 2 tbsp. Parmesan cheese
Salt and pepper to taste
In a bowl, combine seasonings and ½ cup of the Parmesan cheese to make the filling and the rub. Then, prepare your chicken breasts. Slice horizontally through the chicken, making sure to NOT cut all the way through. Leave some room on the outer edge, so it will fold over and double in length. Do this to both breasts.
With both chicken breasts open, place just less than half of the cheese mixture on one side of each. Close up the breasts and press down along the edges firmly. Rub the rest of the mixture over the outside of the chicken. Add some oil to a skillet and cook the chicken over medium heat. This should take about 8 minutes per side. Top with the remaining cheese and enjoy!
