Parmesan garlic chicken recipe

Here is another simple recipe utilizing a Saucy Mama marinade, but this particular marinade and the little add-on to the chicken (prosciutto) make for a dish with great presentation and without any extra labor-intensive steps. 

In case you haven't heard, Saucy Mama has sponsored a recipe contest to promote their line of marinades which are, if you are the type of cook who needs efficiency rather than homemade or handiness rather than hands-on, a delicious and quick fix for meats or side dishes. And because I simply can't turn down any reason to be in the kitchen and brewing up my own creations, for the last few weeks I've been cooking away with the box of marinades they sent me.

Parmesan Garlic Chicken with Prosciutto

2 boneless skinless chicken breasts (best if sliced thin or pounded down)
¼ cup Saucy Mama Parmesan Garlic marinade
2 thin strips prosciutto
½ lemon

Trim excess fat off chicken breasts. Place in a shallow container or zip-top bag. Add marinade and turn over or toss to coat. Let sit in refrigerator for at least 30 minutes.

Heat oven to 400 degrees. Place chicken in a small baking dish (do not pour rest of marinade over chicken, as any excess in the pan will burn during cooking). Take a slice of prosciutto and lay over the top of each breast so that it ripples. Place chicken on center rack of oven and roast for about 30 minutes, or until prosciutto is cooked and chicken is done in the center. Do not overcook. Cut lemon into wedges and serve alongside chicken or squeeze over top.
