Summer is here and I like to eat more salads, especially as a main course. Often times I just pull together whatever I have around to create a big dinner salad. This one was pretty simple, since I had few ingredients on hand.
The meat is the most important part of the salad and I like to try different flavors or different ways of preparing the meat. After cutting the chicken into bite-sized pieces, I dipped it in egg white, then coated it in shredded parmesan cheese. I heated about two tablespoons of oil in a pan and added the chicken. I also seasoned it with salt, pepper and rosemary while in the pan. It only took a few minutes to cook, and the cheese browned on both sides.
The parmesan coated chicken was added to the salad of lettuce, tomatoes and parmesan cheese. Lastly, I drizzled it with blue cheese dressing.
