Paradise Found: Caribbean Deep-Fried Bananas with Rum

There is a reason people in the Caribbean are always smiling, laughing and walking on tropical clouds. It is called "the secret of the sugar cane" or to mainlanders it is simply referred to as RUM!

You see, it is really this simple. You have some rum, you have some great food and you have Jimmy Buffett and Bob Marley. What more can you want in life? Okay, hot bodies on pristine beaches help a little too but hey, this is the Caribbean life and that is fully expected. Spend a week in the Caribbean and you have spent a week in Margaritaville!

Can't afford to spend a week in the tropical splendor? Well that doesn't mean you can't close your eyes and fantasize and there is no better way to do that than while munching on some Deep Fried Bananas with Rum Sauce. Once your teeth crunch into the crispy batter and taste that warm banana combined with the sweet rum sauce, you'll swear you are on the beaches of St. Croix decked out in nothing but a thong and a smile!

Ingredients needed to make Caribbean Deep Fried Bananas with Rum Sauce:

  • 4 bananas, peeled
  • 3/4 cup flour
  • 1 cup cornstarch
  • 1 tsp. ground cinnamon
  • 1 tsp. salt
  • 2 Tbs. superfine sugar
  • 1 cup coconut milk
  • 2 Tbs. water
  • corn oil for frying


  1. Cut your bananas into 2-inch pieces.
  2. Into a large bowl whisk together the remaining ingredients, except the oil, until smooth. Let the batter sit about 5 minutes.
  3. Into a wok or medium skillet, heat a few inches of corn oil until it reaches 350 on a deep-fry thermomenter.
  4. Dip and coat the bananas in the batter and carefully place in the hot oil.
  5. Fry the bananas until they begin to turn golden in color.
  6. Remove the bananas to a paper towel lined plate and let cool before serving.

The Rum Sauce:

  • 3 cups powdered sugar
  • 1/2 cup coconut milk (this is what's left from the can you used above)
  • 1/4 cup rum


  1. Put everything in a bowl and whisk until its smooth!
