Panzanella is an Italian salad that uses day old, stale bread. It is basically a version of Caprese which consists of tomatoes, olive oil, garlic and basil. This salad is a refreshing treat on a hot summer day. Most of the ingredients can be found at the State Farmer's Market in Raleigh. This is also an excellent way to use up stale bread.
Panzanella
- 5 Roma tomatoes, chopped
- 1 TBS. red wine vinegar
- 1/4 c. olive oil
- 1 clove of garlic, crushed
- 3 TBS. basil, chopped
- salt and pepper to taste
- 2 c. stale bread, cubed into bite size pieces
- 1/2 c. mozzarella cheese, cubed or shredded
In a medium size bowl stir together tomatoes, vinegar, olive oil, garlic, basil, salt and pepper. Refrigerate and marinate for 30 minutes. Add cubed bread to the tomato mixture and stir to coat. Refrigerate for at least an hour before serving stirring every 15 minutes. Stir in mozzarella right before serving. Serves 4 as a side.
