If your pancakes need a pick-me-up you can mix some of these ingredients in to add some excitement.
- sliced bananas
- blueberries (make sure you place the blueberries into the batter in the pan, don't mix it in our you will get blue batter)
- maple flavoring
- almond flavoring
- chocolate chips
When you have extra pancakes leftover make this special dish. It incorporates using the mixture normally used for French toast.
French Toast Cakes
- 4 pancakes
- 1 egg
- 1 c. milk
- 1 1/2 tsp. vanilla
- 1 tsp. sugar
- syrup, butter, and powdered sugar to garnish
- cooking spray
Mix egg, milk, vanilla and sugar with a wire whisk in a medium sized bowl. Heat skillet to medium high heat. Spray pan with cooking spray. Dip pancakes one at a time in the egg mixture and place in skillet. Cook on each side for 2 minutes or until browned. Serve with syrup and butter. Sprinkle powdered sugar over top.
