For the easiest pancakes, purchase mixes at the Hannaford store closest to you in Bangor, and keep them on hand. Regular pancake mix is a must, and the buttermilk variety makes a great change of pace at times. Store, or other generic brands, work fine because they use only the most basic of ingredients. Some mixes call for water, oil and eggs, but the easiest to use are the 'just add water' types.
Once you have the mixes at home, experiment with different add-in ingredients. For instance, many people enjoy adding blueberries or chocolate chips to their pancakes. An easy way to add these is by cooking one side of the pancake, sprinkling the add-in over the top, then flipping to cook the other side.

Creamed corn (may need less of the other liquid)
Apple sauce (may need less of the other liquid)
