Paleo popcorn chicken superbowl favorites (Video)

As the super bowl approaches it is time to think of snacks and great portable dishes that you eat while watching the big game. With the high price of chicken wings why not make these paleo popcorn chicken bites instead. These popcorn chicken bites are great for people that are not fans of foods that are overly spicy but are still full of flavor and are just as tasty as their high caloric counterpart.

Recipe for Paleo popcorn chicken:

2 lbs Chicken Breast (cut into bite sized chunks)

1 Egg

¼ cup Arrowroot Powder

½ cup Almond Flour

2 Tbsp Coconut Crystals (or Honey if you must)

2 tsp Sea Salt

1 ½ tsp Pepper

½ tsp Paprika

Beat one egg in a bowl. Dice the chicken into bite sized chunks and coat in the egg.

Put all ingredients into a ziplock bag and shake to coat. I like to add all of the dry ingredients first, so they are all evenly incorporated, then add the chicken.

Frying: You can fry these, but I prefer not to. If you do, heat your oil to medium-high. Shake the excess flour off of the nuggets and fry for about 5 minutes, until no longer pink in the middle and golden brown.

Oven Baking: Preheat the oven to 425 degrees Fahrenheit. Grease a baking sheet and bake for 8-10 minutes, then flip and cook for another 4-5 minutes… or until no longer pink in the middle and golden brown.
