Thursday nights used to be a Chinese take-out night but now that we have adapted the Paleo lifestyle we have take-out Thursdays at home. Tonight we will have a family take-out night with a Paleo General Tso’s Chicken.
Recipe:
4 Chicken Breasts
1/8 cup Coconut Aminos (or wheat-free Tamari)
¼ cup Arrowroot Powder
1 Egg
2 Tbsp Oil (we use coconut or sesame)
Sauce:
1 Tbsp Honey (raw)
¼ tsp ground Ginger
¼ cup Arrowroot Powder
3 Garlic cloves (minced)
½ cup Coconut Crystals or Sugar (raw)
½ cup Coconut Aminos (or wheat-free Tamari)
1/8 cup Coconut Vinegar (or White Vinegar)
8 oz Chicken Broth (or Water)
1 Tbsp Oil (we use a little sesame or coconut)
1 head Broccoli
1 Sweet Onion
1 Green Pepper
2 large Green Onions (sans the white part)
6 Arbol Chilis (I use the dried kind, sans stems)
Sea Salt and Pepper (to taste, if needed)
Combine all of the ingredients for the sauce, mix and set aside.
Cut the chicken breasts into cubes and marinate in the 1/8 cup Coconut Aminos and ¼ cup arrowroot powder and beaten egg.
While the chicken in marinating, cut up all of the vegetables (including the dried chilis). I like slightly larger chunks, about 1” cubes.
Heat 2 tbsp of oil in a large saucepan over medium-high heat. Stir the chicken one last time and then add to the pan with hot oil (draining the excess liquid). Cook until chicken is no longer pink in the middle, about 5 minutes. Take chicken out of the pan and set aside.
Add the remaining 1 tbsp of oil to the pan and let it get hot over medium-high heat. Add the onions, green peppers and chilis to the pan, cover and let sit about 3 minutes. Add the broccoli and green onions for another 2 minutes covered.
Then add the chicken and the sauce mixture (make sure to stir before you add it) and cook until the vegetables are the desired softness and the sauce is thick. Season with sea salt and pepper if need be, although we do not.
